大学芋 is made by coating deep-fried sweet potatoes with caramelised syrup. 大学(daigaku) is the Japanese for “university”, and 芋(imo) means sweet potato. The name 大学芋 derives from the fact that it was popular in college towns during the Taisho (1912-1926) and Showa (1926-1989) period.
