
Ingredients:
90g white chocolate
80g butter
3 egg yolks
3 egg whites
40g x 2 sugar
40g flour
20g corn starch
7g green tea powder (macha)
Preheat the oven to 150C (300F).
1. Chop the white chocolate and butter to small pieces, put in a bowl and immerse into hot water to melt.
2. Mix together the 40g flour, 20g corn starch and the 7g of green tea powder and sift through
3. In a larger bowl beat the egg yolks, slowly adding the 40g of sugar until pale
4. Carefully add the chocolate-butter and the flour-green tea mix to the beaten egg yolks
5. In a separate bowl, beat the egg whites with 40g sugar until thick
6. Carefully fold in the egg whites into the green tea dough
7. Pour the batter into a greased cake tin and bake in the preheated oven for 25mins, then cover with foil and bake for 15mins more.
This cake, like many Japanese okashi (お菓子) isn’t too sweet, so I like to grate some white chocolate on the cake while it’s still warm for those “sweet tooth” days.
